Reviews: Brewster's Is a Fish Empire

Restaurant and market have lots of fish and shellfish to choose from.

is a 3,000-square-foot one-stop shop for fresh lobsters, fish and shellfish along the Shinnecock Canal in Hampton Bays.

What makes Brewster's unique is that all their shellfish is de-sanded in state-of-the-art saltwater purging tanks. They also smoke fish on premises daily; the market is one of only a handful licensed in New York State as a smoking facility.

Near the entrance is a long counter with fresh-caught fish and shellfish under glass. Also on display are house-made fresh fish dips and sauces.

Circling the shop are big tanks filled live lobsters, which the owners store in fresh salt water, chilled to the ideal temperature of 45 degrees.

There is also a sea-life observation tank featuring local sea creatures like fish, crustaceans, starfish and shellfish. These tanks are pumped full of salt water directly from Shinnecock Bay.

One of the main attractions at Brewster's is their great restaurant with counter seating and tables and chairs overlooking large windows.

The restaurant seats about 30 people, with additional outdoor seating in the summer.

At the tables, foodies order Brewster's famous clam chowders and lobster bisque with fish and shellfish platters, burgers, steaks, lobsters, seafood pasta and more.

The restaurant's knowledgeable culinary staff is professionally trained in seafood handling, preparation and cooking.

Brewster's Seafood Market was started eight years ago by Brewster Minton, a commercial fisherman, who ran boats out of Hampton Bays, and who still provides the market and restaurant with fresh fish. Russ Moran, former owner of Indian Island Country Club, took over Brewster's in March 2010. He also runs a full-service, off-premise catering business called Russ Moran Custom Catering. He does lobster bakes, weddings, clambakes, birthday parties, fund-raisers, corporate events and private parties in people’s homes on the North and South forks.

“I’ve been in the restaurant business about ten years, and I love the business,” said Moran. “At Brewster's, I think people come here because they love our unique qualities. We cater to locals and keep our prices fair.”

Downstairs in Brewster's Market, there is a state-of-the-art fish production facility, where all the fish and shellfish gets cut, cleaned, peeled and prepped. The lobsters get steamed, and the coolers are full of fish.
